Yesterday, when it felt like the summer was making an encore (unlike today’s dismal wind and rain) I made a very simple grilled sesame halloumi salad.
Halloumi is a Cypriot semi-hard cheese which is salty and wonderfully squeaky – the texture isn’t to everyone’s taste as it can be quite rubbery but I love it. This can hardly be called a recipe but halloumi great to have in the fridge for a mid-week supper. According to Good Food, it can be kept in the fridge for a year unopened. You’d have to be very lazy to wait a year but good to know!
1 Chop the halloumi into slices
2 Press both sides of the slices into a plate of sesame seeds
3 Griddle for two minutes each side/or until they’re nice and brown.
4 Drizzle over some honey
5 Place rocket + pomegranate seeds in a bowl, top with the halloumi.
Serve with a bit of lemon to cut through the lovely salty cheese rubber.
I also added a bit of red cabbage as I needed to use it up. As an aside, is there a vegetable more beautiful than the red cabbage? Can’t believe I’m asking that but it IS really pretty.
