JAMIE O’S SPECIAL CRUMPETS, BACON + MAPLE SYRUP

If you’re looking for a stodgy soak-up-the-booze breakfast but are getting a bit bored of the usual fry up, you have to try this alternative.

I saw it on a Jamie Oliver programme, one of the ones he does a recipe with his two wee daughters. My philosophy : if Poppy can handle it, I shooould be able to give it a shot.

Crumpets are a bit of ex-pat treasure. I found mine in the Del Haize near Louise but I know that they’re not always available.

Crack two eggs into a flat dish/bowl. Whisk and season.

Place two crumpets in the whisked eggs, holey side down. Leave to soak up the egg for five minutes.

Fry a few rashers of bacon in a hot pan. Remove once crispy.

Remove some of the bacon fat (or not if you’re a dirtbird like myself) and fry the egg-soaked crumpets in the pan.

I usually leave them to fry on each side for between 1-2 minutes.

Remove from pan, add bacon and SMOTHER in maple syrup.
